Moroccan Spice Mix

Moroccan Spice Mix

2 tsp cardamom
2 tsp ginger
2 tsp mace
1 tsp allspice
1 tsp cinnamon
1 tsp coriander
1 tsp cumin
1 tsp nutmeg
1 tsp paprika
1 tsp turmeric
½ tsp anise
½ tsp black pepper
½ tsp cayenne pepper
½ tsp white pepper
¼ tsp clove

Hoisin Salmon Glaze

Hoisin Salmon Glaze

1/4 cup soy sauce
1/4 cup hoisin sauce
1 tbsp sambal oelek
1 tbsp ketjap manis
1 tbsp lemon juice
1 tbsp grated ginger
1 clove garlic
1 tbsp olive oil

In a 9×13 baking dish, whisk together all ingredients.  Marinate salmon for +/-30 minutes (15 minutes on each side) prior to baking at 375°.

Shawarma Spice Mix

1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp garlic powder
1⁄2 tbsp paprika
1 tsp mace
1 tsp onion powder
1 tsp turmeric powder
1 tsp ground ginger
1 tsp ground black pepper
1 tsp ground cinnamon
1⁄2 tsp ground fennel
1⁄2 tsp ground nutmeg
1⁄2 tsp ground cloves
1⁄2 tsp ground cayenne pepper

Combine all spices. Add about 1⁄2 of above to Kalua pig for a great (but not authentic) shawarma or try a Shawarma Burger.

Teriyaki Marinade

INGREDIENTS
1½ cups soy sauce
2 cups water
½ cup brown sugar
½ cup sugar
½ tsp MSG
2 cloves garlic, mashed
3-1” pieces ginger root, finely chopped dash salt
⅛ tsp unseasoned meat tenderizer


DIRECTIONS
Combine all ingredients and let stand for several hours. Let meat (up to 5 lbs) marinade for several hours. Barbecue. Marinade can be stored in refrigerator for 1-2 months.

Soy Ginger Marinade

2 tbsp balsamic vinegar
2 tbsp soy sauce
2 tbsp olive oil
1⁄2 tsp sugar
1⁄2 tsp ground ginger
1 clove garlic, crushed

Combine ingredients. Great marinade for grilled tuna steaks.

Seafood Spice Mix

Seafood Spice Mix

1 tbsp ground bay leaves
21⁄2 tsp celery salt
11⁄2 tsp dry mustard
11⁄2 tsp black pepper
3⁄4 tsp ground nutmeg
1⁄2 tsp ground cloves
1⁄2 tsp ground ginger
1⁄2 tsp paprika
1⁄2 tsp red pepper
1⁄4 tsp ground mace
1⁄4 tsp ground cardamom

Combine all ingredients. Store in an airtight container.

Satay Marinade 2

1⁄4 cup ketjap manis
1 tbsp fresh ginger, grated
1-2 cloves garlic, crushed
1 onion, diced
juice of 1⁄2 lemon
salt & pepper

Combine all ingredients in a ziploc bag. Add meat that has been cut into strips or chunks. Marinate for a minimum of 3 hours (preferably overnight). Place meat on skewers and grill over charcoal. Serve with peanut sauce.

3-4 tbsp brown sugar
1/4 tsp ground coriander
2 tsp lemon juice

1⁄2 cup soy sauce
3 tbsp fresh ginger, grated
1 bottle (12-oz) root beer
1 jalapeno, seeded and diced
3 cloves garlic, chopped

Combine ingredients in a saucepan and simmer until reduced by half.

Asian Chicken Marinade

Asian Chicken Marinade

2 cups soy sauce
2-3 tbsp hoisin sauce
2-3 tbsp oyster sauce
1⁄4 cup brown sugar
4 cloves garlic, crushed
1 tbsp sesame oil
1-2 tsp ginger, grated

Combine ingredients. Add chicken thighs and marinate for at least 1 hour (or overnight). BBQ or fry. Also good for ribs and steaks.
